SWEET CINNAMON BISCUITS
(Preparation time: 20 minutes)
(Baking Time: 15 to 20 minutes)
( Serves: 6 )
Ingredients
2 cups sifted all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/4 cup vegetale oil
3/4 cup buttermilk
8 tablespoons (1 stick) butter, softened
1/4 cup granulated sugar
1 teaspoon cinnamon
*1 cup milk (optional)
1 Combine flour, baking powder, salt and baking soda in a medium bowl and mix well.Stir in vegetable oil. Add butermilk and stir until blended.
2 Knead the dough on a lightly floured surface until smooth. Roll dough into a 15 x 8- inch rectangle.
3 Preheat the oven to 400~F. Grease a 9-inch round baking pan lightly.
4 Spread butter over the dough. Combine granulated sugar and cinnamon in a small bowl and mix well. Sprinkle over butter. Roll up rectangle, jelly roll fashion, starting from one long side. Pinch seem to seal.
5 Cut the roll into 1-1/2 inch slices. Arrange the slices, cut side up, in prepared baking pan. Bake until lightly browned, about 15 to 20 minutes. Remove from oven. *Pour milk over the top if desired(optional). Serve Hot.
Tip....You can trie a little cardamom in the filling of these biscuits, it gives a flavor to the biscuits that its perfect with coffee, you can start with a 1/4 teaspoon ground cardamon. If you like the flavor you can add a little more next time.

FRUIT CAKE
I have a wonderful fruit cake receipe that is somewhat like a pound cake, its very good.
Ingredients:
1lb flour, 1lb sugar, 1 doz eggs, 1/2lb of candied pineapple(yellow and green), 1/2lb candied cherries, 1 box currents, 1/2 to 1 lb chopped walnuts, 1lb butter, 1 shot glass of vanilla, 1 shot glass of orange juice, 1 shot glass of whiskey, 1 tsp b. soda, 1 tsp b. powder.
Mix candied fruit, currents and walnuts with 1lb. of flour,b.powder and b.soda set aside in bowl. In another bowl, seperate eggs. Put in egg yolks,softened butter, sugar, vanilla, oj, and whiskey cream together . Gradually add flour mixture until blended it will be very thick. Beat egg whites until they are soft peaks, fold in batter.
Bake in 2 bunt pans(or 1 lg bunt pan) 250 degrees for 2 1/2 to 3 hours test with toothpick. Very Good.

TURTLES
1 pkg of chocolate chips
chopped pecans
CRUST
2 cups flour
1 cup firmly packed brown sugar
½ cup soft butter
CARAMEL LAYER
2/3 cup butter
½ cup packed brown sugar
Preheat oven to 350 degrees F
In a bowl combine crust ingredients until fine crumbs. Press firmly into greased 12x9 pan. Sprinkle pecans over unbaked crust. Prepare caramel layer in saucepan by combining brown sugar and butter. Cook over medium heat stirring constantly until entire surface begins to boil. (aprrox half to one minute)
Pour evenly over pecans and crust. Bake middle rack for 18-22 minutes or until caramel layer is bubbly and crust is golden brown. Remove from oven and immediately add pkg of chocolate chips. Allow chips to melt slightly swirling them as they melt. Cool completely and cut into squares. Makes approx 3 dozen.

DOUBLE-FROSTED CAKE
Ingredients
1 Box of Chocolate Cake Mix
1 Can of Thank You Brand Chocolate Pudding (store brand works too)
1 8-oz. tub of Cool Whip
Prepare cake mix according to directions and pour into 2 eight-inch round cake pans. Bake in oven as directed.
Remove cakes from pans and cool on wire rack.
Frost top of bottom layer with chocolate pudding and place top layer on top. Frost entire cake with chocolate pudding.
Next, frost entire cake with unthawed Cool Whip. (It doesn't matter if some of the pudding shows through the Cool Whip). Refrigerate until ready to serve.

CHRISTMAS COOKIES
Here is how to make my favorite Christmas Cookies.........
Ingredients:
1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequilla
Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink.
Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar...Beat again. At this point it's best to make sure the
Cuervo is still OK, try another cup ... just in case. Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit, Pick the
frigging fruit off floor... Mix on the turner. If the fried druit gets stuck in the beaterers just pry it loose with a drewscriver. Sample the Cuervo to check for tonsisticity.
Next, sift two cups of salt, or something. Who giveshz a sheet. Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven.
Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher. CHERRY MISTMAS!!

CREAM CHEESE COOKIES
Prep time...15 min
Bake time..10 min
To soften cream cheese quickly, wrap in was paper and nuke for few seconds.
Heat oven to 375 F
1/2 cup butter flavor crisco
1 pkg ( 3 ozs) cream cheese
1 tablespoon milk
1 cup sugar
1/2 teaspoon vanilla
1 cup all purpose flour
1/2 cup chopped pecans
Cream crisco, cream cheese and milk in bowl with mixer until blended.
Beat in sugar and vanilla.
Mix in flour. Stir in nuts. Drop level spoonfulls ( Tablespoon) of dough 2 inches apart onto ungreased baking sheet
Bake 10 min
Makes about 3 doz. 2" cookies
Add grated lemon or orange peel to dough for variation

CRANBERRY ORANGE COFFEE CAKE
Crumb topping
3/4 c all-purpose flour
1/2 c white sugar
1/2 c margarine
Stir together flour, sugar, and margarine set aside
Cream Cheese Layer
250g(1/2 lb) cream cheese softened
1/3 c white sugar
1 egg
1 tsp vanilla extract
small bowl beat cream cheese and sugar until light and fluffy, beat in egg and vanilla...set aside
Cake
2 c flour
1 c white sugar
1 1/2 tsp baking powder
1/2 tsp each baking soda and salt
3/4 c orange juice
1/4 c margarine melted
1 tsp vanilla extract
1 egg beaten well
2 c coarsely chopped fresh or frozen cranberries
2 tbsp orange rind
large bowl combine flour sugar, powder, soda, and salt..stir in juice, margarine, vanilla and egg. fold in cranberries and orange rind..just until mixed. Pour into grease 9 inch round pan..spead cream cheese mixture over cake batter. sprinkle with crumb topping bake in 350F for 65-75 min or until top springs back when lightly touched in center....let cool for 15 min.....makes 12 servings.

CUPCAKES
WARNING! THESE ARE ADDICTIVE!!
I must thank my mom for this one! I prefer to make these in the miniature cupcake pans, but they are great, big or small!, and they also freeze well.
In a small bowl, combine:
1 cup (8oz) cream cheese
1 egg (unbeaten)
1/3 cup sugar
Mix well, then stir in:
1 6oz pkg. semi-sweet chocolate chips
In a large bowl, combine following ingredients, water last
1 1/2 cups cake flour
1 cup sugar
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp salt
1/3 cup vegetable oil
1 tbsp white vinegar
1 tbsp vanilla
1 cup water
Fill cupcake papers about 2/3 full. Top with cream cheese mixture (cream cheese will sink into center). Bake at 350 degrees for 20-25 minutes.

CORN BREAD PUDDING
2 boxes of jiffy corn bread mix
1 can cream style corn
1 can of sweet corn
8 oz sour cream
1 cup sugar
1 egg
Mix all ingredients like a cake batter pour into a greased 9 x 11 cake pan and bake at 350 degrees for 45 minutes until golden brown.
This will cook just like a cake. Make sure its done in the middle. LOL
